Coffee-Rubbed BBQ Chicken
Ingredients:
– 4 bone-in, skin-on chicken thighs
– 2 tablespoons finely ground coffee
– 2 tablespoons brown sugar
– 1 tablespoon smoked paprika
– 1 tablespoon garlic powder
– 1 tablespoon onion powder
– 1 teaspoon chili powder
– 1 teaspoon cumin
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon cayenne pepper (adjust to taste)
– 1/4 cup olive oil
– 1/4 cup your favorite barbecue sauce (plus extra for serving)
Instructions
1. In a bowl, mix together the ground coffee, brown sugar, smoked paprika, garlic powder, onion powder, chili powder, cumin, salt, black pepper, and cayenne pepper.
2. Rub the chicken thighs with olive oil, ensuring they are well-coated.
3. Generously coat each chicken thigh with the coffee rub mixture. Make sure to rub it into the skin and meat for maximum flavor.
4. Preheat your grill to medium-high heat. If using a charcoal grill, set up for indirect grilling.
5. Place the chicken thighs on the grill, skin-side down, and cook for about 5-7 minutes or until the skin is crispy and has nice grill marks.
6. Flip the chicken thighs and brush each piece with a layer of barbecue sauce. Continue grilling for another 15-20 minutes, turning and basting with barbecue sauce every 5 minutes, until the internal temperature reaches 165°F (74°C).
7. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
8. Serve the coffee-rubbed BBQ chicken with extra barbecue sauce on the side. Garnish with chopped fresh herbs like parsley or cilantro for a pop of freshness.
